The 4th International Conference on Acetic Acid Bacteria and World Famous Vinegar Expo was held in Jinci Hotel on September 16th , 2015, which was themed as “Better Vinegar Better Life”. This conference was held by Chinese Condiment Association, Huazhong Agriculture University, Shanxi Mature Vinegar Group Co., Ltd and Magazine of Agriculture Product, Shanxi Zilin Vinegar Industry Co., Ltd, Shanxi Shuita Vinegar Industry Co., Ltd, Taiyuan Ninghuafu Yiyuanqing Vinegar Industry Co., Ltd and Shanxi Liangfen Vinegar Industry Co., Ltd. The conference attracted nearly 300 people, including experts and scholars from 10 countries and regions, domestic universities, famous vinegar enterprises and Shanxi vinegar industry representatives.

  World Famous Vinegar Expo was divided into three sections: World vinegar, Chinese vinegar and Shanxi vinegar. The top vinegar, gathering from more than 20 countries and regions, 34 foreign brands of vinegar and 107 species of foreign vinegar products, were exhibited on Expo, which was the “sourest” party in the world. There were a number of foreign vinegar on the Expo, including Italian Balsamic Vinegar, which is the world’s most expensive, well-known American Heinz vinegar, women's favorite South Korean brand CHUNGJUNGONE vinegar, French BEAUFORG vinegar, KUHNE vinegar from German, Italian brand PONTI and Monari, et al give us an enjoyable experience. From the Expo, we knew that lemon, coconut, figs, rose, pineapple, grapes and plums could also be raw materials of vinegar, but the raw material and brewing process of Shanxi Mature Vinegar is the most classic.

After the conference, participants were organized to visit famous vinegar companies in Shanxi. When a foreign expert saw bubbles continued to emerge in the vinegar during the Acetic Acid fermentation process, he commented “This is the most beautiful dance and delicious taste in the world!”.

    During the visit in Zilin Vinegar Industry, fermented grain turning equipment in the brewing workshop, delicate fragrance of aged vinegar in the solar aging room, mechanized operation in packing workshop and the garden-style factory got praise from domestic and foreign counterparts and scholars again and again. Mr. Paul, the promoter of the 4th International Conference on AAB, said that the modernized plants, industrialized production and informationized control of Zilin Vinegar Industry were totally different from other Shanxi vinegar enterprises, which amazed him.

In the tasting process, several foreign scholars gave great praise to the prepared vinegar soaked bean, pickles and health care vinegar of Zilin Vinegar Industry. After a brief talk, they told us:Because of its raw materials and brewing process, Shanxi mature vinegar is very notable, nutritious and good taste.It is a precious gift!
